Cinnamon Spiced Doughnuts

So we decided to create these tasty Cinnamon Sugar Doughnuts! To give it our Chhabra Chai signature twist we threw in a tea bag of our 3 Spice Cinnamon Chai!

Ingredients

For the doughnuts

  • 125g all-purpose flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 3 Spice Cinnamon Chai tea bag

  • 1/4 teaspoon ground nutmeg

  • 1 large egg, at room temperature

  • 65g packed light brown sugar

  • 60ml milk

  • 60g yogurt (room temperature)

  • 30g unsalted butter, melted

  • 1.5 teaspoons pure vanilla extract

For the topping

  • 200g granulated sugar

  • 1 teaspoon ground cinnamon

  • 115g unsalted butter, melted

Method

  • Preheat oven to 350°F (177°C).

  • Spray a doughnut pan (use a muffin pan if you don’t have this) with non-stick spray. Set aside.

  • Whisk the flour, baking powder, baking soda, salt, 3 Spice Cinnamon Chai Blend and nutmeg together in a medium bowl. Set aside.

  • Whisk the egg, brown sugar, milk, and yogurt together until smooth.

  • Add the melted butter and vanilla, whisking until fully combined.

  • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not over mix.

  • Once the batter is very thick, spoon into the doughnut cavities.

  • Bake for 9-10 minutes or until the edges are lightly browned.

  • Allow to cool for three minutes and transfer to a wire rack set on a large piece of parchment paper or on a large baking sheet.

  • For the topping, combine the sugar and cinnamon in a medium bowl.

  • Once the doughnuts are completely cool dip them in the melted butter, then dunk into the cinnamon sugar mixture coating all sides - best served immediately

  • Yields: 8
